Dear Sad Bananas on the counter,
You deserve more!
Just because this week you might not have been loved as much as usual doesn’t mean you deserve to be thrown away or put in the composter quite yet. You need another chance!
So, here is my sorta-healthy, quite versatile, banana muffin recipe. Easy to whip up during the first 20 minutes of nap time and coming out happy, making your house smell delicious. #savethesadbananas
¾ c. organic unsalted butter (you can also sub in coconut oil, which is delicious)
1 c. organic sugar (you can also sub in coconut sugar)
2 egg yolks
1 tsp vanilla
3 over-ripe bananas, smashed
¼ teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder
2 c. whole wheat flour/all purpose
½ c. chopped nuts (I don’t always include)
2 egg whites, stiffly beaten (’til it forms peaks)
Cream butter and sugar well. Add egg yolks, vanilla and bananas.
Add sifted dry ingredients and then nuts.
Fold in stiffly beaten egg whites.
Bake at 350 degrees for about 11 minutes for mini muffins and about 18 minutes for regular size muffins.
